Sylvia Xim’enez (Proprietor)
Restaurant business runs through her veins, 3rd generation restauranteur, begun working in the family business at the age of 14 years of age. Worked under the guidance and alongside the company of her family at Santa Fe restaurant, the root/origin of her passion for excellent food, attentive service, exquisite cocktail creations.
24 years later, she has founded, Il Sogno Ristorante in Wheaton and Aguamiel Restaurante in Clarendon Hills.
Sylvia believes in quality, complexity but most importantly in the love to create and share with others her passion for her culture and history in the most exquisite, appealing way to share, through the culinary art.
Her goal is not only to have patrons but create friendships, friends that join her diningroom to enjoy a great day. She has been featured in the Hungry Hound and “n” channel 7’s documentary in up and coming Latin entrepreneurs.
Enrique “Kike” Gomez (Executive Chef)
A native from Mexico. His passion is Mexican cuisine, he is able to create many of the complex moles and sauces that are traditional to Mexico and many other dishes. He is now the executive chef at Aguamiel Restaurante where he blends traditional Mexican sauces and moles with contemporary presentations and techniques.
A master, an artist in the kitchen, creates with passion, love, pride of his roots; from humble beginnings rose to work for top restaurants such as Frontera Grill for 19 years of his career as a teaching chef for Mr. Rick Bayles. His skills go beyond technical, they are true to his love of Mexico and all that it represents, staying authentic to every ingredient, flavor, tradition our cuisine has represented for centuries.
Chef “Kike” has now been creating and recreating his artistry for the past 2 years at Aguamiel Restaurante, not only creating but leading by teaching and sharing his knowledge to a full staff and delighting people that honor us with their presence at Aguamiel.
“Kike” believes no flavor can be truly represented unless it is made as our ancestors created them: fresh, from scratch, with passion and the love it is created for those who share it with.
And he stays true to his believes by creating every dish, every ingredient the way they were meant to be.
